Monogram hearth oven not reaching temperature
The hearth oven runs at temperatures nothing else in the kitchen sees, and when it stops reaching them the causes are the ones high heat produces: seals that have hardened, elements that have failed partially, and sensing that has drifted. There is no published code table for this appliance, so what it is doing is the whole diagnosis.

Six ordinary causes
What this usually turns out to be
Cheapest and commonest first, which is also the order we check them in. They sit hundreds of dollars apart, and only the unit settles which one is yours.
-
A hardened door seal
At these temperatures a small loss of sealing costs a great deal of performance.

An element failing partially
Heat arriving unevenly, or less of it, with nothing obviously broken.
Hearth oven service from $245 -
Temperature sensing that has drifted
The oven believes it has arrived when it has not.

Terminals and wiring near the heat
Heat ages everything close to it, and terminals are a common finding on high-heat appliances.
Hearth oven service from $245 -
A cracked stone
Usually a separate matter from temperature, and worth investigating for what caused it.

A crack is wear rather than failure, and it is worth knowing what caused it.

Look at the door seal
Burnt-on residue is what stops a seal sealing.

Narrow it down before anybody arrives
A description of the behaviour leaves a few possible causes. A code names the subsystem before anybody opens anything, which is why it is worth photographing before it clears.

About Monogram hearth oven not reaching temperature
Time it, and note whether it ever arrives
An oven that gets to temperature slowly and an oven that never gets there are different problems. Time a full preheat from cold and write the number down. Then look at the stone and at the door seal — a cracked stone and a hardened seal are both visible, and both matter more here than they would anywhere else in the kitchen.
What it usually means, by the kind of Monogram appliance
Monogram sells one appliance in several forms, and the same behavior points at different things on each of them. A built-in side-by-side and an integrated column are not the same service situation, and a dual-fuel range and an induction range fail in different halves.
- The 30-inch hearth oven — A stone floor and a cavity built for high heat, installed in cabinetry like any other wall appliance. Everything about servicing it follows from the temperature it works at.
- Compared with a wall oven — A conventional oven leaking a little heat still bakes. At hearth temperatures the same leak costs far more performance, which is why the door seal is high on this list rather than low.
- Compared with an outdoor pizza oven — This is an indoor electric appliance in a cabinet run, so the answers are electrical and the access is a kitchen access.
An appliance with a small installed base, and what that honestly means
The hearth oven is recent and there are not many of them in South Florida. The physics is the physics of any high-heat oven and the diagnosis follows from it, but parts are not stocked and they come on the manufacturer's timetable. We would rather say that before a repair is agreed than discover it afterwards.

Questions about monogram hearth oven not reaching temperature
Can the stone be replaced?
Yes, and it is not a write-off. A hearth stone takes enormous thermal cycling and a crack after some years of hard use is wear. What we would check at the same time is whether something on the appliance caused it — an element running hot on one side, for example.
How do we avoid cracking it again?
Bring it up to temperature with the oven, keep liquid off it when it is hot, and never clean a hot stone with water. Those three cover almost every cracked stone there is.
