Flames that are yellow, uneven, or that will not turn down far enough to simmer. On a professional top the burners are properly serviceable — caps, rings, ports and the valve behind the knob — and most of these complaints turn out to be a cleaning and adjustment job rather than a replacement. Years of boil-over do more to a professional burner than age does.

Usually the valve or the burner ports rather than the igniter. A professional burner has to hold a very small flame steadily, and that is the first thing a partially blocked port takes away. It is a serviceable problem on this equipment.

That is the air adjustment or a blocked port, not the gas. It is worth attending to promptly — sooting means incomplete combustion, and incomplete combustion in a kitchen is not something to leave running all winter.
